Hurrah for summer!
I love it when the fresh produce starts hitting the market. Now that the corn is in, I will make corn salsa about every week. Here is my recipe:
4 ears of corn
2 chopped tomatoes (Roma are the best)
2 Jalapenos (I prefer Serrano peppers)
Juice of ½ lime
1t Balsamic vinegar
Roast the corn on the grill basting with olive oil and season salt. Roast the corn until it starts to brown but still solid. Mix all ingredients and add a dash of sugar to bring out the flavor. When you mince the peppers, leave the seeds in if you like a little more kick!
This salsa is great on hot dogs, brats, burgers. Also terrific on chips with a margarita! Haven’t tried it for breakfast yet…..but how about on scrambled eggs?
